Cookee's Café LLC began during the COVID-19 pandemic as a response to a very specific problem: with indoor seating closed or restricted, founder Cookie saw a need for people who couldn't go inside a coffee shop to still get a good cup of coffee, and started an outdoor coffee pop-up as the solution. What began as a single corner pop-up in downtown Greensboro has since grown into a mobile catering business capable of serving corporate events with hundreds of attendees. At the center of the menu is Cookee's Blend, an organic, single-origin coffee with a hint of chocolate that the business sells in multiple formats: by the cup for individual customers, in bags for people who want to brew it at home, and in bulk for offices looking to stock a break room. That flexibility, selling the same core product across three different formats, has let the business serve everyone from a single walk-up customer to a company ordering coffee service for an entire staff.
