Fast food restaurant in Chicago, IL
Slow-cooked Louisiana-style gumbo served in five varieties: loaded seafood, pescatarian, Chicken Ya Ya, turkey, and vegan, available in 8oz and 16oz portions. Sides include traditional potato salad and a peach cobbler coffee cake. The kitchen also sells Cynthia's Dry Roux, an unbleached flour baked, browned, and sifted so cooks can mix an instant roux at home. Catering is offered by the gallon with a week's notice, and the gumbo food truck serves events of 75 or more across Chicagoland and nearby suburbs.
Founded in September 2013 by Cynthia Boyd-Yette and Terry Yette after retiring from a combined 66 years with the Postal Service. Cynthia learned a gumbo recipe in culinary school more than 30 years ago and refined it into a family tradition, first testing it on co-workers and then selling at the Homewood and Evergreen Park Farmers Markets. Strong response led the couple to convert a step van into a mobile food truck serving the West Side, North Side, and South Suburbs. With support from a Chicago Recovery Plan grant, they opened their first brick-and-mortar location on South Halsted on Chicago's South Side.
