A Fishtown café from the Philadelphia coffee roaster, serving espresso drinks, cold brew, and the Draft Latte, a frothy nitro-textured latte the company invented and now serves on tap. Beans are roasted in Philadelphia and sold as blends, decaf, organic, and single origins across light, medium, and dark roasts, including longtime café favorites like Corsica and rotating seasonal roasts. Ready-to-drink cold brew and Draft Latte fridge packs, gift boxes, and coffee subscriptions are also available, along with a membership program offering member pricing. Founded in Philadelphia in 1994, when its founders opened a café with a micro roaster in the back, drawing on coffee traditions they encountered while traveling. The name, French for 'the Dove,' reflects that spirit of hospitality and exploration. A full-scale Philadelphia roastery followed in 1995, supplying restaurants and hotels; later milestones include the Pure Black Cold Brew recipe in 2009, the Draft Latte in 2015, a Michigan canning plant, and a 2023 partnership with Chobani. The company now operates 29 cafés nationwide.
