About Mac Dynamite

A gourmet mac and cheese operation working as a mobile food vendor, offering unique variations on the classic infused with spicy flavors, including vegetarian options such as the Shroom o Rama. Onsite catering and pop-ups are available for events, along with platters ordered in advance for parties and holidays. The team sources local ingredients when possible and collaborates with other Chicago businesses, charities, and non-profits.

Chef Eric created the recipe wanting to bring hand-crafted food to neighborhood barbecues instead of chips and beer, testing batches on his roommates before debuting it at a monthly Humboldt Park barbecue and dance party called Sunday Brunchlox. The mac was a hit and earned him the nickname Mac Dynamite, which he made for the monthly party for the next three years. After winning multiple awards at local Chicago competitions, Eric teamed with Jeffrey, a hospitality veteran, and Virginia, a pastry chef, to build the business. Mac Dynamite has since been featured at events, breweries, and competitions in Chicago, Milwaukee, and New York.
