Founder Mark Erwin opened the restaurant in 1988 after 15 years in the service industry, deciding Louisville needed a serious bar-b-q spot. Lacking barbecue experience, he traveled to Western Kentucky to study with longtime pitmasters, then returned home and developed his own sauces through extensive kitchen experimentation. For the original Middletown location he chose a historic building that had housed Hancock's Feed Store for more than 50 years, and cooked the first pork shoulder in its pits the night before opening.
