Plowshares began roasting specialty coffee in Hillburn, New York in 2008, at a time when the number of quality-focused roasters in the metropolitan area was very small. It grew from a small wholesale roasting operation into a roasting and retail coffee company in New York City. The business describes its work as built on relationships with wholesale partners, retail customers, and coffee producers.
