The restaurant takes its name from Saperavi, a celebrated Georgian wine grape known for producing deep, robust reds, reflecting the restaurant's broader mission of sharing Georgia's wine and food culture with New York diners so that guests can, as the restaurant puts it, transport themselves to the heart of Georgia's wine culture without leaving the city. The kitchen offers a seasonal, continuously evolving tasting menu built around Georgian specialties. Signature dishes include shkmeruli, a roasted chicken dish served in garlic sauce; chakapuli, a lamb stew; khachapuli, Georgia's iconic cheese-filled bread; and khinkali, traditional Georgian dumplings. The restaurant pairs these dishes with an extensive list of Georgian wines, tying the food and drink program together under the same regional focus that gives the restaurant its name.
