Soko Bag opened in Phoenixville in a former pizza parlor, the product of a specific cross-continental origin story: co-founder Shea Roggio, who grew up near Phoenixville, met South Korean-born J.H. "Alice" Chang in Dubai in 2017. After both were laid off during the pandemic, the pair traveled to Korea before eventually opening a Korean fried chicken restaurant back in Roggio's hometown area, bringing techniques and flavors learned abroad to Chester County. The restaurant built its menu around Korean fried chicken finished in distinctive house-made seasonings, with "snow chicken" — coated in aged white cheddar powder — becoming its most popular order, alongside a more traditional gochujang glaze that delivers a spicy, slightly sweet Korean barbecue flavor. Soko Bag also holds its own brewery license, allowing it to serve its house beer, Thirsty Friend, canned in partnership with Animated Brewing Co. in nearby Coatesville, alongside other regional breweries' beer, wine, and Pennsylvania-distilled spirits. That combination of scratch Korean fried chicken and a real beer program, born from a chance meeting overseas and a pandemic career pivot, has made Soko Bag one of the more unusual and specific restaurant concepts in the Phoenixville area.
