Middle Eastern charcoal-grilled chicken, served as whole spatchcocked birds with sides or as shawarma plates and shawarma with fries. Chickens are marinated daily and staples like hummus are made from scratch rather than from canned ingredients. Two house condiments, Zu Sauce and Charcoal Sauce, are sold alongside the food. Online orders go directly to the restaurant's POS for pickup.
Founder and owner Ahmad Shaheen is from Bethlehem and moved to the United States in 2001. He drew inspiration from a well-known chicken and garlic sauce restaurant in his hometown and opened The Charcoal Restaurant in 2019 as his first venture in the restaurant industry, aiming to bring those flavors to Louisville.
