Nashville-style hot chicken served across a range of heat levels, with birds seasoned down to the bone. The menu includes Southern sides made from scratch daily, a Southern Salad, local craft beer, and desserts such as banana pudding and peach cobbler. Catering, delivery, online ordering, gift cards, merchandise, and a Coop Club rewards program are available. The company does not franchise, growing only where it can maintain its standard.
The Bishop family had long worked in restaurants before the brand existed. Nick Bishop Sr. tried to retire in 2006 after a decades-long hospitality career, then opened Bishop's Meat & 3, a cafeteria-style restaurant in Franklin, Tennessee, where son Nick Bishop Jr. joined him. Father and son added hot chicken and developed their own spice blend, offering multiple heat levels by 2011. Hattie B's Hot Chicken opened just off Broadway in Nashville on August 9, 2012, and has since grown to a dozen restaurants across five states while remaining family-owned.
