The name honors Clarence Jack Malone, a native of Macon, Mississippi who moved his family to East St. Louis, Illinois, and who was known for his cooking, his insistence on cleanliness and his charm. His grandson, CEO Carlos L. Malone, Sr., was nicknamed Mr. Jack as a child because he was short for a long time like his grandfather. The family began the restaurant in Clarence's memory, with the stated intention of building a chain of restaurants and leaving a legacy for future generations.
