Castle Gardens ILM is a boutique catering and event design firm serving Wilmington and the surrounding coastal towns. The team caters weddings, corporate events, baby showers, repasses, brunches and private dinners, cooking everything from scratch with local ingredients. One contract covers venue search, custom menus, florals, tablescapes, bar service, day-of coordination, setup and cleanup. Signature offerings include charcuterie boards, grazing tables, private chef dinners and premium drop-off catering.

Chef Dex founded Castle Gardens ILM after nearly two decades in frontline healthcare. The pandemic prompted her to pivot toward family and wellness, turning a lifelong passion for cooking and design into a business. Raised in the Bahamas, she blends Caribbean flavors with global cuisine. The company plans a future 10+ acre botanical gardens venue in Castle Hayne, NC for celebrations, reunions, retreats and festivals.
